Fried Tomatoes
This is a lovely breakfast, and makes a nice substitute for eggs if you're like me and think eggs are nasty.
Ingredients
Italian Bread
Butter or Olive Oil
Balsamic Vinegar
2 Slices of Beef Steak Tomato (or really any old tomato)
5 Fresh Basil Leaves chopped
Salt (if you substitute Olive Oil for butter)
Granulated Garlic
Pepper
1). Melt the butter in a small frying pan over low heat.
2). Add Tomatoes, bring heat up to medium.
3). Add a teaspoon of balsamic vinegar and the basil.
4). Keep the food moving and use a wooden spatula to keep the basil off the bottom of the pan.
5). Add just a dash of pepper and garlic (and salt if you've used olive oil)
The whole tomato-cooking shouldn't take more than four minutes or so. Cook until the tomato is paler and soft enough to cut with a fork. Experiment with time.
6). While you are cooking your tomatoes, put a piece or two of Italian bread into your toaster. Eat with butter and if you'd like, a little balsamic vinegar on top.
